Baking, Cooking and All Things My Mom

36Smile! Day 28

I don't know what it is, but when it's cold outside all I want to do is bake, bake and bake some more. It's also very hard me for to sit still and do nothing. We had been out the whole morning perusing antique stores, eating at the most delicious breakfast place called The Original Pancake House—the BEST pancakes I have ever had!—I cleaned the entire house and we walked the dog. You would think I would want to sit down and relax next, like what Chris did. But nope, I started baking.....

Cranberry Scones

Oatmeal, cranberry and chocolate chip cookies

At my monthly Costco trip there was a bag of dried cranberries on sale. So of course I buy them, thinking I'll eat them all the time as snacks, add them to salads like you see the fancy restaurants doing—which, in reality I don't really like but it still looks cool—and find other reasons to justify my buying them. Which I have yet to eat them as a snack or add to them a salad. But I will always find a use for something.

Like the time I bought a large quantity of apples at Costco and they all turned out to be way too soft to eat. So, I just found a recipe for apple bread, healthy-fied it and have since made like four loaves of this bread. It's the best ever! I'll will post all these recipes on my Healthy Food, Healthy You website.

Much like this bread, I am going to be baking these scones and oatmeal cookies for a long time to come!

Every time I am baking or cooking, I am reminded of cooking with my mom when I was little and going home all the time, when we lived in Houston, to help her with her next creation. We would always help her cook the big Sunday lunches and holiday dinners. It is one of my favorite memories of my mom. I still even call her every now and then to ask her cooking questions. I love the caring and special relationship I have with her. I am reminded of that everyday, especially in the kitchen.
