Project 36Smile! Still Going Strong


Project 36Smile!

It is so weird how your mood can change so quickly. On that note:

Monday: I felt confident about several upcoming opportunities, projects and leads. You have to be positive about what you're doing and put this feeling out there in the universe. I am a big believe of that. You can't feel sorry for yourself every day.

I am also doing attributions every day. Something I recently got from my Daily Om email. Write down on a piece of paper exactly what you want in your life, in a certain project you're doing, in the future, etc. It can be anything from your dream job you love, money, children, own your own home—you get the point. Every day, take a few minutes and say your attributions out loud for the universe to hear. Not like that so people think you're crazy. But in your room, if you're out and about, in your head. Putting your wants out there will help you feel more confident in what you're doing in life to accomplish them. Bring it on universe!

Tuesday: My husband came home! I had butterflies in my stomach all day. It's true what they say: that feeling doesn't go away. And it sure hasn't for me. I couldn't wait to see his face. I even fixed his favorite crock pot chili. I love this man!

Wednesday: I had a great meeting at one of my favorite local retail shops here about a possible job opportunity. Getting this job would be ah.may.zing because it would combine my love of PR, fashion, customer service and not to mention shopping. I love that feeling after acing an interview/meeting or project. Take pride in that feeling. I don't think we do that enough.

Thursday: I was finally able to get back to running after a 2 1/2 absence because I injured my foot. But while I was running in Queen Anne this certain, distinct smell made me smile inside and out. That misty, dewy smell the air gets after it rains.

It was still a little damp outside and I was running by a heavily wood area and I took a deep breath and it took me right back to when I was little playing with my brother and sister in Canada. My aunt has a cabin in Sault St Marie, Canada right by the lake. My parents would take us up there as often as we could and we just loved playing outside, running to lake to see who was brave enough to jump in, sitting in the boat with our dad and playing with their huge dog. Love the little smells that make me smile during the day!

BTW Why do kids not get outside to play anymore?! It was the best thing we did when we were little. So, my task to you: get out side this weekend! Grab your fav book, meet a friend at a local park and go for a run or walk, visit downtown, go to the museum, take the kids to the park. It's good for the mind, body and soul!

Chris and I also met up one of his old friends for dinner. They are thinking about moving to the Northwest. I like that we have got to a point where we actually know this city and can give advice to friends and family. I like the good ole Emerald City a lot more than I was expecting.


Friday: It's my dog's first birthday! I like birthday's and anniversaries because, whether you like it or not they make you reminisce about the past. I love thinking about when my husband surprised me with him for my birthday almost a year ago. I love how much joy he has brought to us during this tough move to a new city with no friends or family. And today he got a big boy hair cute. I am in love with this ball of fur. Here is his from puppy to big boy. How can you not smile when you look at him:


I am also super excited about our upcoming trip to Olympic National Park this three day week with Chris and his mom and sister! Can't WAIT!!!!!!!

While The Husband's Away, I Shall Play

Project 36Smile!


Saturday: "While the husband's away, I shall play."
And that I did. My retail therapy included trips to Forever 21—don't hate—you can get some great finds at affordable prices. It's about how you wear them and what you pair it with that makes the outfit.  Pictures of my finds to come soon! A shopping trip isn't complete without a stop at H&M, which I didn't have in Houston. I am a little obsessed with this infamous store. To me, it's a better quality Forever 21, with slightly higher prices. But you get what you pay for. I also stopped at several local boutiques here: Madewell, Freepeople and Mercer, all in U Village. These stores are a little on the pricey side, but great quality and casual yet chic fashion finds. I could spend all day shopping.

A girly day isn't complete with out your favorite dinner and a chick flick. I have been dying to try Athina's on the Ave—as they say here—Queen Anne Ave, that is. It's the best Greek food I have had thus far. How do you compare a Greek place? By the Gyro's of course. The meat was perfectly crispy on the ends and moist on in the inside. The tatziki sauce—my favorite thing about Greek food—was thicker than it normally is but had great flavor. Their Greek salad with home made dressing was the prefect, fresh compliment to the gyro. Make sure to ask for the dressing on the side or you will get a salad drowning in dressing. No bueno.

Chick flick of the night: The Vow. Chris kept putting off this movie so I finally rented it. It was actually better than I thought it was going to be. As much as I can watch Channing Tatum, he was actually a little corny in this movie. What is great about this movie is that it was inspired by a true story AND the real life couple are still together with two kids. Such a great story.

Sunday: "To Relax or To Relax? That Is The Question."
As the saying goes: Sunday is a day of rest. It definitely was for me. Walking my dog is actually so relaxing. Pets don't really have a care in the world and we should probably be a little more like them. Yes, they have a pretty easy life. But even when they are in the wild, living in a pack, they have a mission and don't stop till they get there—whether it be finding food, water or shelter.  When my dog knows he is going on his walk, he is the happiest ever and I love that. Seeing this can relax you more than you ever know.

Another thing that relaxes me on Sundays is going to church. I LOVE it. It is my time to sit in peace and quiet, talk to God, thank him for every thing he continues to bless me and my family with. A sense of peace and relaxation falls over me and I feel like I'm ready to conquer the world.

Continuing with my day o'relaxing, I made my way to one of my favorite coffee shops, El Diablo. Going here makes me smile for several reasons: the very first time I went here, I took a picture of the empanadas and alfajores (South American goodies) and sent it to my sister. I told her that we are coming here when she gets in town. And that was one of the first things we did. She loved it! I always think about that when I go there. They also have some of the best coffee here in Seattle. Also, their passwords to the WIFI are quite funny: one time it was funkymonkey, and on Sunday it was Ilovelucy. So cute. I caught up on some reading and researching for an upcoming interview.

Chick flick of the night: New Years Eve. Not too much to tell here. Yea, there were a lot of big names, but it was just OK. But, it actually reinforces one of my Bucket List To Do's: Celebrate New Year's Eve in NY. Let's see how long it takes to do that one :)

Be Happy About The Littlest Things

It's the little things that made me smile the past couple of days.

Thursday
The smell of freshly cut grass and sweet aroma of orchids as I was out walking my dog. Summer is definitely here!

Friday 
Sticking with smells: the simple, enticing and scintillating smell of coffee. Yum. 

It's those smells that bring you back to a different place of your life. I love when certain smells, songs, cars, landscapes or pictures bring you back to a very specific point in your life. 

Smell away and relish the way it makes you feel.


I also dropped off some applications and resumes and feel very confident about these prospects!

Girls Will Be Girls

Project 36Smile!

I love watching a new show that's been getting a lot of buzz. So I was excited to come across Girls on HBO. It is created by and starring Lena Dunham ("Tiny Furniture"), the show is a comic look at the assorted humiliations and rare triumphs of a group of girls in their early 20s.

To me, it's a nitter, grittier version of the beloved, and cult-following favorite Sex and the City. Here are my funny comparisons to one of my favorite series of all time.

Hannah (Lena Dunham) is of course who the show is based around, so she's my Carrie. She's not fashion-forward at all, unlike Carrie. She's actually the complete opposite, but she narrates it in her own eclectic way like SJP did and over-analyzes everything.

Shoshana is the naive, virgin and she's my Charlotte. Her character bio even describes her as having "Sex and the City" dreams. She's shy but has wisdom on the weirdest topics and not afraid to lend her advice on subjects she knows.

Jessa is def the sex-crazed Samantha. She's the British cousin of Shoshana. Lusting after the father of the kids she babysits, has had many boyfriends and is very outspoken about having sex and everything it involves.

Marnie is my studious Miranda. She is the only one who has a stable job, is very put together and has an off-and-on again relationship with her serious boyfriend. Kind of like Miranda and Steve. Her relationship with her boyfriend is described as a "smothering kind of love" but she doesn't want to let go of him. 

No show likes to be compared to another show. They always want to be on the brink of something new. But when you have a show with four girls as your main characters and the entirety of the show revolves on them and their sex conquests, work problems and life in general, then of course you will be compared to the show that did it the best: Sex and the City. 

It actually is a great show with a fresh perspective and it appeals to both sexes: my husband likes watching it as well.  You will also recognize Brian Williams daughter as Marnie. She's one of my favorite characters. A definite must watch.

Hanging Onto Hope

Project 36Smile!

Tuesday found me going to my weekly dermatology appointment for my psoriasis treatment. 

About a month ago, I started a new Pharos Light Therapy treatment for my scalp psoriasis. It is going on 10 + years with my battle with this incurable disease. You can read about my struggle here

The dermatologist at the Dermatology Associates here in Seattle are amazing! I honestly had a lost a some hope in finding a treatment that would work to at least manage my psoriasis. After he saw me, he diagnosed it as severe on my scalp and started on the Pharos light therapy. 

A little background on light therapy treatment:
Present in natural sunlight, UVB is an effective treatment for psoriasis. UVB penetrates the skin and slows the growth of affected skin cells. Treatment involves exposing the skin to an artificial UVB light source for a set length of time on a regular schedule. 

Gradually, I had started to see improvement. But it wasn't until I was on a date with my husband and wore my favorite black blazer that I actually saw the proof. I wasn't flaking—at all! And of course the itchiness has subsided. This is such a huge weight lifted off my shoulders, literally. I actually smile now when I reach for a piece of black clothing, instead of shying away from it. 

Only those with psoriasis will truly understand the day-to-day struggles I have gone through and continue to go through. Finding relief in the littlest things have the hugest impact on the quality of life someone living with psoriasis can experience. I never lose hope either. It's OK to have your bad days. No one is perfect. But understanding the disease is a big part of coming to terms with it as well. That's what I tell my NPF mentees. Knowledge and hope are two things that making living with this disease, just a little easier. 

Like I said, there is no cure for psoriasis. For now, I am excited that I have found a treatment that has basically sent my psoriasis into remission. 

Here's to hoping it lasts and hoping it just kind of goes away like it did with my mother. *Crossing my fingers!*

You Have How Many Taste Buds?

What follows this post is proof that your 9,000 taste buds really can change from wanting fried food and salty, junk food to actually craving fresh and healthy food.

It's no surprise I like to cook. You will find me in the kitchen every day cooking up something: whether it be dinner every night—and yes, I said every night—or breakfast on the weekends, I'm all about easy recipes that you can make your own.

When I first started cooking, I felt I had to follow the recipe to a T. I got so mad at myself if I didn't have a specific ingredient, I felt the recipe just wouldn't taste right with out that one ingredient. But learning from my mom and grandma, who hardly ever used recipes, I started to improvise. I don't think I have a followed a recipe to the exact ingredient list since then—and I love it.

Monday found me going to one of my favorite recipes, that Chris likes too. It comes from Woman's Day magazine and their 75th anniversary issue. They had a whole four-page spread on different pasta dishes, entitled Oodles of Noodles. I hit the jackpot! Yes, I do get that excited about cooking.

I tore it out and got to work.

When choosing a pasta dish, a tomato-based pasta dish is always the healthier choice. The white sauces are cream and butter based which are full of fat and calories. Not to mention, tomatoes are full of the cancer-fighting antioxidant lycopene. So, eat away!

I cooked this up with a side of steamed veggies and a plateful of fruits.

Let me just mentioned something here: when I first met Chris about five years ago, he was eating Taco Bell and canned Chili for dinner. There were no veggies or fruit for this bachelor's meal intake. So, what happens when you start dating some one who cooks all the time and eats fruits and veggies on a reg basis? You start to eat them too. And there was no more Taco Hell. Plus, he has said my homemade Texas Chili is better than anything out of a can. Well, duh!

At dinner, he now has a balanced plate and even eats fruit at lunch. You may be rolling your eyes at this "mushy, gushy stuff" but there is a reason why I mention this. Because Chris is real-life proof that your taste buds do change over time. And if you allow them to. You have approximately 9,000 taste buds that are constantly changing. If you have eaten a certain way—say fast food and junk food—your entire life, don't expect a rapid change. Once you allow your taste buds—and you—to appreciate the taste of fruits and veggies and baked fish and chicken. I promise. If my husband can change, then you definitely can too.

Whenever I fix meals like this, I appreciate the fact that he always tells me that my cooking is great and loves it. Makes my Project 36Smile! an easy thing to write about on days like Monday.

Made a Cool "Discovery" This Weekend

Project 36Smile!

It's really easy to want to be outdoorsy here when the weather is 70 degrees and sunny—like it has been for the past week. It has felt amazing! Honestly, to walk outside and not feel that that initial blast of cold air and need your pea coat, is a great feeling.

Saturday found us at Discovery Park with our puppy! Everyone kept mentioning it to us and how beautiful and expansive it was. When we drove the 15 minutes it took us to get there, we were surprised as to why we had never been there before. It kind of reminded me of one of the many hikes we took through Hana, in Maui. It was very woodsy, lush and green most of the hike. Then we get to one of the best outlooks from the park, seen here:

It really just makes you stop in your tracks, breathe in a deep breath of that clean air and relish where you are. And that's exactly what we did. It felt great to kind of step away from the busy week we had and spend some quality time outside together. Here are my boys :)

Mix up your usual weekend of going to the same restaurant or seeing the newest movie and hike around Discovery Park. Your lungs could probably use some clean air and your legs with thank you for the exercise. Plus, you'll feel better too.

The beautiful weather continued on Sunday. Let me preface this by saying—for those who don't know—since we live in Seattle, our moms are obviously in Houston. So it was kind of weird to not have plans after church to go to a nice restaurant or cook something up for the moms in our lives. You would think we would be getting used to it, since we haven't lived in Houston in almost three years, but nope, it doesn't. Your moms just have a way of never making you forget them :)

So after attending a nice mass at St. Anne's in Queen Anne,  we hopped on our bikes and cruised around for about five hours. We didn't really have a plan as to where we were going or what we were going to do. There was a bike path over by Magnolia that we had driven by a couple of times, so we headed that way.

We ended up riding to Discovery Park again, riding along the trails that led us to Centennial Park, close to downtown. Another park we had yet to visit with gorgeous views of the water and city. It was breathtaking!

Of course, it's a little different than Maui where all you see is just baby-blue water. Here you see baby blue water surrounded by land. The contrast of the places was nice. The fact that we have the experiences to make comparisons still amazes me to this day. Maui. *sigh*

We ended up biking into downtown and had some lunch at Red Robin. Actually pretty delicious food for being a Red Robin. Back home we went after an activity-filled, picture-esque bike ride.


Thank you Seattle for giving us great weather and some amazing places to add to our ever-growing list.  Where to next?


We also ended up skyping with my mom while they were still at my sister and her husband place celebrating Mother's Day. BTW she loved the gift we gave her: it was a photo album from Shutterfly. She absolutely LOVED all the photos and paragraphs that accompanied them. We talked to his mom over the phone as well and she LOVED her canvas printed photo of all of us at our wedding.  I think they had a great Mother's Day.

Flashback Friday - BSC Forever!

Project 36Smile!


On my usual walk today with my dog, I noticed a sign in the QA bookstore "What was the first book you read?" explaining a reading initiative local schools are doing to get kids to read more. Which is a fantastic idea! With so many tech toys out there, it's vital to get those out of their hands and replace with books. 

It got me thinking and though I don't remember my very first book, I do remember being engrossed in the—wait for it—Baby-sitter Club Books. OK, go head and laugh. I allow it for a minute. But everyone had their book, TV show or vice they have and that was mine. 

But cmon, how can you not like  Kristy, Mary Anne, Claudia and Stacey and all the misadventures they had together?! It brings a smile to my face as I write this. I remember being so excited to delve into each one as I flipped open the book. I liked reading each story and comparing myself to the girls—I think I was always a Stacey at heart. With her love of fashion and boys and being the exceptionally well-dressed girl at Stoneybrook Middle school, I liked her the most. Besides her math smarts, we had to be related, right?! She had diabetes, I had psoriasis. She even dotted her i's with hearts! OK, so almost every 13 year-old-girl did that, but still. 

That's the thing about these books though. Ann Martin had a way of writing straight to her audience—me—a 13-year-old girl looking for a place to fit in no matter how many friends she had at her school or how cool she felt. She based the character of MaryAnne on herself. So the adventures were real-life scenarios that middle school girls went through. I loved reading every detailed page and couldn't wait to get my hands on the next chapter. She made that awkward girl maybe not feel so awkward while being apart of something where you weren't judged on a day to day basis. It gave you an escape from the oh-so-terrible-world feeling you got sometimes. You felt safe reading the books and wanted more when you were finished. 

Oh, and of course I watched the video as well. My sister and I adored the collection! We were of course, BSC fan members too. 

We didn't have iPhone, iPods, iPads, computers, Nintendo when we were my age, so reading books and getting outside is what kept us occupied. That needs to change now. You have to find what your kids, nieces or nephews are into and get a book right up their alley. Even better, go to the book store with them and let them pick something out that they actually want to read. Letting them pick it out will have the biggest impact on them. 

I don't know what my parents did with those books, but I can't thank them enough for starting my love for reading at the right time. I would totally reread those books if I could. To this day, I LOVE reading books. I can't wait till I find the next great book, grab a cup of coffee and curl up and delve into that world.

Oh, and thank you Ann Martin for developing an amazing, relateable series that holds a special place in my heart almost 15 years later. Hat tip to you. 

Hopefully that special kid in your life finds the book that keeps them turning the page until they crave more and more. Smile once you know you did that for someone, it will be a great feeling!

Get Off Your Butt and Enjoy The Ride

Project 36Smile!

What do most Americans do when they come home for a long day at the office?

Sit their butts down on the couch, pop in their version of a healthy frozen meal and veg out in front of the TV. 

Yesterday was a different kind of day for us. 

Before Chris even got home, he sent me a text saying "Get your bike ready, let's go cruise around QA." You have no idea how happy that makes me. Chris and I were really active in Maui. How can you not be? It was 70 degrees and sunny, literally every day. So we would be running, swimming or body boarding at the beach every week. It was great!

I've kept up my running like a mother here, but Chris on the other hand is something else. He just can't get into it. Who knew that he would get into biking here?! He loves it! And you have no idea how happy that makes me! The fact that he wants to get out and go biking and actually enjoys it. He is like a little kid with a brand new toy—can't get enough.

It was such a beautiful day yesterday, we had to stop and soak up the view this Emerald City gave us on days of beautiful sunshine:

Like I always say, we're always on the mind set of "what's next? I need to get this done right now," mentality, so sometimes you NEED to stop and smell the flowers, enjoy the view and get your head out of the iPhone for more than two minutes. It wont kill you, I promise. Unplug for a little bit, take a deep breath and enjoy what life has given you.

I know we did.

And we might just do it again today. 

BTW: You can burn anywhere from 200-700 calories depending on how light to vigorous you bike. Don't feel silly jumping on your bike! This is the most bike-friendly city I know. Save gas and enjoy the wind blowing through your hair. It's a great feeling!

How To Find Hope In The Midst of a Brutal Downturn

Hope. 

That is the one, of the many things that I am holding on to during this "brutal downturn." Job downturn that is. 

But hope is the thing that makes me smile today. 

I received the book, The Job-Hunter's Survival Guide, in the mail today, by none other than my mother. 

She is always there, rooting me along in this job searching, telling me to keep my faith, hold on to hope, be patient and let go and let God. 

Written by the infamous, Richard Bolles, author of What Color Is Your Parachute (FYI 10,000,000 copies sold), I knew I was in good hands. Immediately, I open to the chapter titled "How to find hope in the midst of a brutal downturn." To know that I have alternatives, as he calls it, is extremely helpful to say the least—and inspiring. He lists 18 alternatives that gives job hunters like me a starting place. Granted, I have tried the majority of the alternatives, some I have not.

But the "secret to keeping hope alive is to always have these alternatives."  

A big one that stood out to me—and one that I don't think job hunters think about—is Self Inventory. 

Once it actually hits us that "OK, so that really wasn't a bad dream, I don't have a job now," is when it gets real, yet we have no idea where to start. 

"Before you do anything else, do a thorough self-inventory of the transferable skills and interests that you most enjoy and do best, so you can define in stunning detail exactly the job(s) you would most like to have, to your family, friends, contacts, network and employers. And then use this knowledge to focus your search for work."

After we understand what it is that we can actually do, have a goal in mind—companies you want to work for—the end is easier to see and the job search wont be that bad. 

The same goes for when you actually land the job as well. Don't focus ALL your time on the "roles and responsibilities and impressing your boss." Take time to inventory—so to speak—the company. Get to know their mission, commitment, previous work and press. It shows that you not only know how to do your job well, but how the company in general works. 

If you're a fellow job hunter like me, take time and take inventory on your self and your skills. You'll feel a lot more confident about your ability to find a job and the experience you can contribute to that dream company you want to work for. I know I did.

Monday Catch Up, Tuesday Make Up & More

After a very busy and jam-packed weekend, there were things that needed to be done around the house. 

Cue Monday Catch-Up Time

When you don't have a job, you spend your time job searching, networking, job searching, networking—you get the point. 

I decided to take a break from that and clean the house. Not sure about you, but I can't really function if I have a dirty house. Especially if I'm working from home. Out came the broom, vaccum, Wet Jet Swifter and the handy dandy Clorox wipes. To work I went. 

I don't know what it is, but I felt so much better when I was done. I think it comes from my mom. She always made sure we made up our beds every morning—which I still do to this day, much to the dismay of my husband. But it starts you off on the right foot. Make your bed, and your day is ready, as corny as it sounds. Do it, and you'll feel much better. She always liked to make sure the house was spick and span whenever people were coming over. Even if we people weren't coming over, the house still had to be clean because you never know who and when you'll have company. 

Since I knew I was going to be cleaning for the better part of the AM, had a meeting at 5:30 and Chris would be off of work later than normal, I wanted something in the Crock Pot that would be ready when we came home. 

I combined, petite diced tomatoes, black beans and kidney beans, tomato sauce, chopped onions, garlic powder and Slap Ya Mama Sauce (google it! It's a staple in my house) and six skinless, boneless chicken breast. Set on high for 4 1/2 hours. Take out the chicken, shred it, stir to combine. Serve over quinoa or brown rice and you have a hearty and healthy meal ready when you come home! Will post recipe on my website soon.  It was delicious!

I also had a great meet up with Emily of Banyan Branch. We have similar stories about moving to Seattle, searching for PR jobs, meeting people and the oh so famous Seattle Freeze. She is well connected on Twitter and connected me with some more people as well. I am always grateful for the people that I meet here and the connections I make. You never know what will happen. Thanks for the chat Emily! 

Today, found me catching up on some PR freelance work, emails and social media. I also had a friend from Mary Kay come over and show me some new colors for spring and their new all natural skin line called Botanicals. It felt so light and non-greasy. Contemplating purchasing it...... hmmm, I think I'm an easy sell. But I didn't buy anything, so I get a little pat on the back.  It was great to just hang out and have a little make up session. 

I also got in a short run. No matter how long or shot my runs are I feel so much better about my day and my self that I got out there and exercised. Even if it's just for a 30 min walk around the block, your body will thank you later.

Food Truck Happiness

Sunday greeted us with sunshine and the Mobile Food Rodeo. Chris got VIF (Very Important Foodie) passes from his work and we met his friends Ryan and Gina there. We had a blast!

I have to confess, we have been here almost a year and haven't tried one food truck. Seeing as how this seems to be the mecca for food trucks, I am not sure how we managed to go this long. But we were like little kids in a candy story.

I wanted to try everything but atlas didn't. Here is a run down of what we had and the verdict:

Mini Donuts: Best mini donuts! The right amount of crispiness to dough ratio, sprinkled with the cinnamon and drizzled with caramel. I'm craving them as we speak.

Jemils Big Easy: Cajun Sampler. Definitely had the spice, but authentic Cajun food complete with dirty rice. Chris LOVED this one.

Crisp Creperie Seattle: $10 for a crepe? You're kidding me! But it was totes worth it. I opted for their savory roasted, turkey, bacon, quac, and roasted onions. Great portion for price, could've been a little warmer for my liking. But I will be back to try their myriad of sweet ones.

Street Treats: Oh.Em.Gee. You can't go wrong with ice cream sandwiches. Homemade you say? Even better. The Cobra was calling my name: double dark chocolate cookie filled with chocolate ice cream. YUM! This is a must!

Skillet Street Food: They had Poutine. If you don't know. Google it. A Canadian food staple. We first tried Poutine at a little restaurant in Port Townsend that was known for Poutine. Best decision ever. They weren't like the ones in Port Townsend, def had their own taste. Not bad.

Tokyo Dog: Japanese Style Hot Dogs. This was all my husband. For $7 you get a huge hot dog with speciality toppings. For a hot dog, it was tasty. Too mayo-tasting for me, but Chris liked it.

Rollin' Q: "Southern Down Home Cookin' BBQ" Mark your truck with that and this Southern Girl is there. The $5 chopped beef slider was calling my name. After a little bit of a wait, I sank my teeth into this moist, juicy slider—and it was worth it. But for the price I would've like to see another slider or some fries. I will try their Mac-n-cheese next.

We also managed to make our way to Safeco Field to watch the Mariners pull out a win against the Twins.

SIDE NOTE:  I was not crazy at how the event was run in general. Stay tune for my solutions on how I would've made it better.

All in all, it was a GREAT day with GREAT food and GREAT friends.

Who Knew What Cinco De Mayo Had In Store For Me

For some—or for many—Cinco De Mayo may just be another excuse to drink heavily for no reason; has been called the Mexican St. Patrick's Day and much more. But for me, it holds a special place in my heart as that is the first time Chris and I officially "hung out" outside of work. I guess you could call it a date, even though both of our friends were there. It was more of a super cas hang out. But I did have butterflies in my stomach the whole day.

Flash back to 2007, Chris and I were working together at ENVY. It was a Friday so everyone was in a good mood, of course. Chris was about to leave, and he asked if I had any plans for Cinco De Mayo. I kind of laughed to myself and said something sarcastic like "does anyone ever make plans for Cinco De Mayo?" He ended inviting me to hang out with his friends if "I wasn't doing anything." Which in boy talk means, they would love to see you but are too "manly" to say so.

He said, "Well you should give me a call if you change your mind." Mind you, we hadn't exchanged numbers yet. Here comes my sarcastic side again "How am I supposed to call you if I don't have your number?" Still to this day I remember him laughing and that million dollar smile that got me. He ended up writing his number on a piece of paper for me and I did the same thing.

Cinco De Mayo came, and I was stuck in the library studying for an upcoming final. We end up texting the ENTIRE day. He finally convinced me to meet him and his friends (Joel) out later that day. I bring my sorority sister, Nikki Trejo with me. FYI, Nikki and Joel were in our wedding party three years later :) This was the only photo taken that night. But I love the fact that we have this and can look back on it!



We met them at Onion Creek and end up talking to each other the entire time, drinking cervezas, chowing on queso and watching the Rockets play.

A little side note, a few months into our dating, his friend Joel decides to put me through a little test. I had no idea what he was doing until Chris tells me years later. Joel decided to hit on me one night when we were all hanging out. He was VERY persistent. Of course, I didn't take his bait, at all. Much to his surprise. Sorry, Joel-io, I was a keeper!

The rest is history.

Every Cinco De Mayo now, we end up going to a Mexican place and reliving that very first time together. It's fun, and not to mention, healthy to relive special anniversaries and occasions like that, even though some of your friends may think its corny.

But your brain is wired to remember and lock in those memories. Recreating those memories has the same effect that eating dark chocolate or falling in love does, which makes your brain happy. Chocolate which contains phenylethylamine(PEA), the same chemical your brain releases when recreating those special memories or falling in love. PEA signals your brain to release these happy endorphins.Thinking about surprising your significant other with a special event? Baking their favorite childhood sweet treat? There's your excuse! Now get to it.

I am beyond blessed with Chris and everything we have experienced in life together. Meeting at Envy, living in Houston, traveling and living on Maui, experiencing many firsts together to now experiencing what Seattle has in store for us.

Thank you Cinco De Mayo for being more than just another reason to get drunk.

Turned My Friday Funk Upside Down

Project 36Smile!

I'm usually pretty amped up about Friday, even though I don't really have an office job. I know that the weekend is here, and that's even better. 

I'm thinking, today is going to be a good day. 

Well, I received two emails from my job search today and I didn't even get a first interview for one AND second interview for another one. I'm starting—wait, I am—very frustrated. 

I started to listen to Charlotte Gainsbourg. It's pretty mellow music and perfect for the way I felt. Then "You've Got To Let It Go" came on. Here I am depressed about the job rejection and this song comes on. Big time sign or what? Then my mom's words came into my head "Be patient, God has something for you."

It was time to get out of my Friday Funk and let it all go. 

Cue: Clay Walker. 

He is one of my all-time favorite country musicians. I can't help but smile, listening to his music. It brings me back to the days of riding in the car with my sister, singing at the top of our lungs, EVERY song on EVERY album. Seriously, it's kind of scary how we know the lyrics to almost every song. We also had to go to all his concerts whenever he was in town. A particular July 4th event comes to mind.

He was playing at the Houston downtown Fourth of July firework concert and show. So, of course we went. And dragged our boyfriends at the times—husbands now—with us. They know about our obsession and love us anyway. Once he came on stage we knew we had to get closer. Apparently some man—slightly inebriated, I'll say— over heard us and said, "You girls want to get closer?" We both looked at eachother and said "Um, yea!" He said, "follow me. You just have to push your way through like you belong there." Even true in life. Act like you belong here and everything else falls into place.

So we did just that. Pushed our way through till we were literally right infront of the stage the entire concert. We sang every song at the top of our lungs and lost our voices as a result. The sign of a good night. 

I love listening to songs and albums that bring you back to a certain time in your life. That's a sign you're living a great life. 

Something else to make me smile today is that it's me and Chris' DATE NIGHT! We haven't had one in a long time. With no job for moi, we've definitely been on a saving spree. So to go out tonight will be nice and much needed. And not mention we have some exciting things planned for the weekend. Stay tune!

I could have let this job rejection thing get my entire day down. But I'm looking on the bright side of this thing called life: I have my husband who has a great job and loves going to everyday; a healthy and happy marriage; I do some freelance PR; we have our health, our family and friends; a roof over our heads and food in our bellies. 

Gotta appreciate the little things in life.

A Mother's Love....

Project 36Smile!

...is hard to sum up.

I don't know how many of you have already done your Mother's Day shopping, but I finished mine today. 

This—and Father's Day—is probably one of my favorite holidays to shop for because my parents are everything to me and finding something to show them how much they mean to me is beyond impossible. But I can try. 

My mom taught my how to put on make up, how to wear the perfect pearls, how to love everything around me. She made all my birthday cakes, took me shopping for my First Communion, Confirmation, Prom and Graduation dresses and the most important dress any girl will ever wear—my wedding dress. She taught me how to be the confident strong woman I am and the loving wife I continue to be every day for Chris. 

Um, yea, what are you supposed to give/make/find/send to sum up that? 

I think I found something. But these are only things. Life isn't about these things we give our loved ones it's about the memories we have, the love we share and our support we give each other on a day to day basis. 

Mother's Day, Father's Day, Christmas, Thanksgiving and birthdays are just one extra special day we get to tell our loved ones just how much they mean to us. That doesn't give us a free pass every other day. Make sure you tell your loved ones how much you do love them and how much they mean to you. 

I hope my gift sums of the memories and love I have for my mom in a way that's hard to say with words.

What Is It About Soup and A Cold, Rainy Day?

What do you do when you are running low on groceries—meaning no meat among other things—and it's close to dinner time?

This my friends is what we call improvise! And that I did!

After several years of cooking, watching my mom and grandma cook, perfecting my craft—as my husband would call it— reading health books and getting my health certification, I feel like I know what I'm doing in the kitchen.

Last night was proof!

There was no meat, like at all. I never let that happen. But some how it happened this week. Where else can you get protein? From beans! Any and all kinds. That's what you want the basis of your meal to be, is protein—it keeps you fuller for longer—and vegetables of course.

I started a pot of low sodium petite diced tomatoes with olive oil and basil; mixed in black beans and cannelini white beans (low sodium, washed and drained) and chicken stock. You can add any left over veggies you have, canned tomato sauce, etc. I also added cumin which is a great complement whenever you are cooking with black beans. That goes the same for basil and tomatoes.

Bring that to a boil and let it simmer for about 30 mins to let all the flavors absorb.

Then I added whole what penne pasta, garlic powder and salt and pepper. Let simmer for about 10 more minutes, then it's ready to eat!

Serve with a side salad. Mine had romaine lettuce, spinach, carrots, sugar snap peas, fat-free feta cheese and olive oil and vinegar.

This meal was so rich, hearty and full of flavor that my husband and I were not missing the meat at all.  And he is a big meat eater so this was a big deal. I loved all the different flavors we got from the beans and tomatoes. It tasted like a soup my grandma would make. And on a cold, rainy Seattle day it was perfect. It makes great leftovers to take to work the next day.

I think we will be having a meatless meal every week. Meatless Mondays or Mac-n-Cheese Mondays anyone? Stay tune for a low-fat, still full of flavor when Mac Met Cheese recipe.

A Flower A Day, Keeps The Smiles.... Coming!

As I was walking into my dermatology office, there was your typical looking, older security guard, always smiling, standing next to a table with vases of flowers. 

He walks up to me and gives me two of these simple, yet gorgeous yellow flowers. 

It immediately put a smile on my face for the rest of the day. I still have one on as I'm writing this. 

He didn't offer an explanation, nor did I ask. I looked around, and every woman he had given the flowers to had smiles on their faces. It was as if we were brought back to high school, the day of Valentines Day and it's Flower Day. Am I going to get one? Is my frienemy going to get one? If my boyfriend doesn't give me, he is dead. Do I have a secret admirer?

The butterfly feeling when you do get one and you have no idea who it is from. 

You don't know why. 

You don't know who sent it. 

All you know is that this simple gesture of receiving a flower just made your entire day—no matter how crappy it started. Your makeup wasn't right, we missed the bus, forgot our homework—or that new project you worked all night on to meet the next day deadline— wait — I guess things don't really change much from when we're younger!

Thank you kind man for making my day, along with many other women. 

Men, take note. You don't have to buy a super expensive bouquet of flowers to make your significant others happy. Your local corner store probably has a bundle of their freshest daffodils, carnations(make sure you get at least 5-10, otherwise they just look sad, or local flowers for under $7. Stop in and get it for your wife, daughter, sister, mother. You have no idea how much you will make their day. Brownie points for you.
